前不久,英美的外媒开始报道,咖啡中含有一种叫作“丙烯酰胺”(acrylamide)的化学物质,说是会致癌(cause cancer)。于是像美国这样的喝咖啡大国瞬间就沸腾了,各个相关组织开始提起诉讼,要求店家解释喝咖啡的潜在危险,尤其以加州的情况最为激烈。如果诉讼成功,加州的咖啡店可能需要张贴相关警告标志,可能以后你去星巴克和 Costa 会发现咖啡杯上都贴着咖啡致癌的信息,说不定店员每卖出一杯咖啡还得口头提醒顾客注意风险。

不过真的有这么严重吗?其实吧,这个问题有点尴尬。丙烯酰胺这个物质在我们吃的很多东西里都存在,米饭、土豆、面包、饼干、咖啡加热的时候都会产生这种物质,这让他们变得焦黄并散发出独特的香气。食品科学里把这叫做美拉德反应(maillard reaction),是一种常用的制作工艺。

One of the most important flavor-producing reactions in cooking is the Maillard reaction. The important thing about the Maillard reaction isn’t the color, it’s the flavors and aromas. The molecules it produces provide the potent aromas responsible for the characteristic smells of roasting, baking, and frying.
美拉德反应是烹饪过程中最重要的造味反应之一。它最重要的部分并不是颜色,而是味道和香气。就是它产生的这些分子物质让烧烤、烘焙和油炸具有了各自独特的气味。

Water is needed to carry out our body functions, remove waste and carry nutrients and oxygen around our body. Since we lose water everyday through urine, bowel movements, perspiration and breathing. The amount of water we need is dependent on various factors such as the humidity, our physical activity and your weight. We need to drink water 2-3 litres or about 8-10 glasses.

  据《独立报》报导,佛罗里达大西洋大学和哈佛医学院的研究人员对785人进行了为期5164个昼夜的监测,观察咖啡因、酒精和尼古丁的摄入对睡眠的影响。
  
  由FAU的Christine Spadola博士领导的研究人员在《睡眠》杂志上发表了这项研究,他们比较了个人对这些物质的摄入量,并将其与睡眠日记和参与者佩戴的腕表传感器的数据进行比较,这些数据记录了睡眠时间、效率以及他们醒来的速度。
  
  他们发现,睡前4小时内摄入咖啡因与手腕传感器测量的睡眠因素没有明显联系。
