那些喝惯了便利店咖啡和袋装咖啡的人,常常很不理解为什么有人愿意花3倍的价格去星巴克这种连锁店喝咖啡。

这里面当然有个人喜好的关系,这里就不讨论这种主观问题了。

我们还是来看看便利店咖啡和星巴克咖啡到底有哪些不同吧。

从制作流程上讲,便利店咖啡和星巴克咖啡都非常地标准化(standardized)

他们在每家店配备相同的咖啡机,在咖啡机上调出相同的参数组合,给相同的产品使用相同的咖啡豆配比,还把店员的操作流程也给标准化了;所以他们能保证你不管在哪家店买到的同一个产品都是一样的。

从这个角度来说,便利店咖啡和连锁店咖啡并没有什么不同。

那么我们再来看看为什么便利店咖啡的价格要低很多。

先来看看咖啡豆。

为了控制成本,大型便利店选择的咖啡豆都不算太低级,比如全家采用的是阿拉比卡咖啡豆(Arabica),这种咖啡豆占全球咖啡豆产量的七成以上,是一种性价比很高的咖啡豆,肯德基、麦当劳用的也是这种,只是各家的调配比例会略有不同。

咖啡豆从采购(purchase)到烘焙(roasting)再到磨制(grinding)有很多流程,所以这就是个供应链(supply chain)的问题了,如果对供应链的整合能力不够强,那么成本就会很高;而由于大型便利店的规模都很大,所以他们能和大型的咖啡供应商合作,在谈价格的时候也更有控制力,所以便利店咖啡能够在咖啡豆这一块省下不少成本,最终的价格也更低。

从上面这一点来说,大型便利店在采购咖啡豆的时候甚至比小型的精品咖啡店拥有更强的能力。

然后,便利店为了降低人工成本和管理成本,通常会限制自己的商品品类,基本只卖美式(americano)、拿铁(latte)、卡布奇诺(cappuccino)这三大基本款;而事实上这3种已经能满足绝大部分顾客的需求了。

所以,总结来说,单从基本款来看,大品牌便利店的咖啡和大品牌连锁咖啡店的咖啡并没有太大的差别;不过如果你想喝一些非基本款的风味咖啡,那还是得去星巴克这样的连锁店了。

最后,贴出一位星巴克党总结的去星巴克的理由吧:

The health benefits of coffee are regularly disputed but a new study has provided some good news for caffeine lovers.

Researchers from the National Cancer Institute and the National Institutes of Health have found that drinking coffee is associated with a lower risk of early death.

In fact, they revealed that drinking up to seven cups every day – twice the amount of caffeine recommended by the UK Food Standards Agency – could cut death rates by 16 per cent.

For the study, the team used data from the UK Biobank, through which 500,000 UK adults aged between 38 and 73 completed health questionnaires, underwent physical examinations and provided biological samples.

Starbucks Corporation had a homecoming of sorts last month.

After more than 30 years of global expansion and domination , the coffee giant opened its first store in Italy, the birthplace of espresso, and the country that inspired former CEO Howard Schultz to grow the company from a sleepy local roastery to the ubiquitous chain of cafes it is today.

Do you prefer coffee or tea? The answer to that question might in part be down to your genes, research suggests.

Scientists say a genetic predisposition to perceiving the bitterness of particular substances appears to nudge us towards one beverage or the other.

Dr Marilyn Cornelis, co-author of the research from Northwestern University in Illinois, said: “The study adds to our understanding of factors determining beverage preferences – taste, in particular – and why, holding all other factors constant, we still see marked between-person differences in beverage preference as well as the amount we consume.”

The study, published in the Scientific Reports journal, involved two sets of data. The first was a large twin study which showed that, at least in those of European ancestry, particular genetic variants are linked to the strength of perception of different tastes:

The Clever Cup initiative is a part of Costa’s wider plan to increase the use of reusable cups and tackle the growing issue of coffee cups ending up in landfills. In April this year, the coffeehouse chain committed to recycling the same volume of cups it puts onto the market.

  其中,研磨对萃取的影响非常巨大,这也就是为什麽同样一台磨豆机,有的卖两三百块,有的可以卖到两三万块,展现的就是对味道细节的细微差异。

  家用的磨豆机基本上都会选择小磨盘,例如小富士、小飞马、小飞鹰这类的研磨机,而商用的磨豆机一般选择的磨盘就会更大,像EK43、Ditting804这些。
  
  我们可以来对比一下磨盘的大小对於味道的影响,相信很多从业人员对此印象深刻,在经济预算不够的情况下,宁愿买便宜的大磨盘磨豆机,也不愿意买昂贵的品牌小磨盘磨豆机,主要原因其实就在於小磨盘磨豆机由於磨盘小,重复研磨的次数更多,磨盘更容易发热,所以造成的细粉率较高。
  
  我们使用小磨盘的机器就很容易出现当磨完咖啡粉之後,最後一下掉了很多细粉下来,这些都是因为磨盘过小重复研磨造成的结果。而大磨盘的机器没有这方面的问题,因此香气更容易留在咖啡杯中。
  
  一个专业的咖啡师,在咖啡的冲煮过程中,会有自己非常熟练的一套流程,烧水、温壶、洗滤纸……到所有的东西都准备完之後,你会发现每个咖啡师都把研磨咖啡豆放到最後一步去操作。
  
  这是由於咖啡豆在经过烘焙过後,细胞壁会变得又硬又脆,而我们经过研磨之後,是让咖啡呈现类似细砂糖般的颗粒状再开始进行萃取,但和生豆不同的是,经过烘焙後的咖啡豆只需要施加一点点力就可以轻易粉碎。
  
  而咖啡豆在经过研磨後,我们通过显微镜可以观察到,细胞壁之间的缝隙内黏稠部分就会暴露在磨碎的咖啡粉表面,这个黏稠的部分就是咖啡的可溶性芳香物质和油脂混合而成。萃取时,这些可溶性芳香物质会与热水接触,使得咖啡的香气和油脂被充分溶出,就构成了咖啡的风味和口感。
  
  而咖啡豆经过研磨後虽然更容易被萃取,但也会让香气飘散或加快咖啡粉的氧化速度,在磨成粉之後,咖啡粉的氧化速度会比咖啡豆快上数十杯。
  
  因此在众多“咖啡萃取的诀窍”中,尽可能在萃取前再开始研磨,能够更好的保留香气,是重中之重的事情。
  
  磨豆机的研磨粒径选择是影响咖啡萃取最重要的一步,因此在磨豆机的选择上也会影响咖啡的整体口感和风味走向,磨豆机除了有电动或手摇磨之分,不同的磨盘也有不同的研磨结构,但从微观的角度来看,即使是同一把剪刀将咖啡豆对切成一般,切口处也并非能够呈现完全一样的切口状态。
 
  这是由於咖啡豆细胞壁的各个部位本身硬度就不同,烘焙时由於焦糖化反应,咖啡豆硬化膨胀,让本身硬度就不同的细胞壁产生了更大的缝隙,因此只要有一定的力量,咖啡豆就会从最脆弱的地方破裂,这也使得咖啡豆在磨碎以後,形状都是不规则的呈现。这一点在粗研磨的时候特别明显。
  
  因此市面上不同的刀盘,例如:平刀、锥刀、鬼齿刀盘……其目的都是为了使咖啡豆的研磨更加均匀,从而实现均匀萃取。
